Kench cure
(English) White fish, particularly cod and allied spp. (in Germany especially saithe) and salmon, that have been salted by stacking split fish and salt in alternate layers so that the pickle that is formed can drain off freely. (See also: White fish, Split fish, pickle cured fish)
